I was introduced to this simple, yet delicious salad when I was living in Australia back in 2008. It on practically every menu so this peppery treat quickly became a staple in my diet.
It’s so incredibly easy it’s almost funny.
What you’ll need:
• Rocket leaves (known to us as Arugula)
• fresh Parmsan, shaved (if you want to do it right)
• 1/4 cup olive oil
• 2 tbsps fresh squeezed lemon juice
Combine olive oil and lemon juice in a jar and give a good shake. Season with S&P if you desire–I did.
Toss dressing with leaves in a bowl then top with fresh parm shavings (and a little more S&P).
