The ‘Summer’s Still Here Salad’ with red onion, dill, feta & mint

It’s the end of October and I have officially been pumpkin & squashed out. I always look forward to this season so I can get into all the comfort food but I can’t help but miss that fresh taste of summer. This salad recipe I found on The Kitchn looked too good to resist, even around this time of year.

To start, you need to finely slice some red onion and put the slices in a bowl of cold water. Mint should be in every salad after tasting this one–just the freshest taste in the world, no?SAMSUNG CSC Processed with VSCOcam with c9 presetThen drain the onion and pat dry. I did this step without even knowing why we’re supposed to! But my guess is that it either softens or hightens the flavour (I’m not even going to Google it).SAMSUNG CSC Processed with VSCOcam with c9 presetNow for the dressing, mince up some garlic and throw it in a large bowl with a pinch of salt and red wine vinegar. Then drizzle in olive oil while whisking.SAMSUNG CSC Processed with VSCOcam with c9 presetThen, add the red onion, red pepper, cucumber, (olives that I left out) and herbs and let marinate for 10 minutes–or in my case 30 minutes because my timing was off… like usual!SAMSUNG CSC Processed with VSCOcam with c9 presetWhen you’re ready to serve, add the tomatoes and feta cheese and toss together to combine. The red onion taste seemed stronger than usual, perhaps because of the cold water soak? Someone has to tell me what that is!
